Whole Roasted Chicken

Pre-heat oven to 350˚

Place chicken in a roasting pan, and season with salt, pepper and onion powder inside and out. Rub 3 tbs. of butter in the chicken cavity. Place pats of the remaining butter around the outside of the chicken. Stuff with 3-4 sliced pieces of celery.

Bake uncovered for 1 hr and 15 minutes, or until the temperature reaches 180˚F. Remove from heat, and baste with melted margarine and drippings. Cover with foil, and allow to rest about 30 minutes before serving.
