Summer chicken kebabs

A great easy meal you can throw on the grill or cook in the oven. Prep the night before and enjoy a quick summer meal with your family.

In a large bowl, mix the oil, honey, soy sauce, and pepper. Dice the chicken into large pieces. Keep a small amount of marinade separate before adding the chicken to brush onto kabobs later while cooking. Coat the chicken, garlic, zucchini, onions, and peppers in a covered bowl in the refrigerator for at least 2 hours.

Remove from fridge and skewer the marinated chicken chunks alternating veggie and chicken until you fill the skewer.

Coat the grill with non-stick spray and lay the kebabs on the grill. Let cook for 15 min until chicken is cooked through and remove from grill. Let rest and serve with a side salad.

PRO TIP: Make the night before and let sit overnight for maximum flavor.
